White Chocolate Apricot Cookies

  • 1 cup flour, all-purpose
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 12 tbsp unsalted butter, softened
  • 3/4 cup brown sugar, light or dark
  • 1/3 cup sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 1/4 cups rolled oats, old-fashioned
  • 1/2 cup dried apricots, chopped
  • 2 oz white chocolate chips

For the Icing

  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • 1/2 tsp vanilla extract

For the Cookies

    Preheat the oven to 350°.

    In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

    In a stand mixer or using a handheld mixer, beat the butter for 1-2 minutes.

    Add the sugar to the butter and mix another 2 minutes.

    Add the egg and vanilla extract. Mix until combined.

    Add the flour mixture. Mix until combined.

    Add the oats. Mix until almost combined.

    Add the apricots and white chocolate. Mix on a low speed until just combined.

    Prepare 2 baking sheets with parchment paper or silicone mats.

    Form into 18 balls (9 on each baking sheet).

    Bake for 11 minutes making sure to rotate the trays halfway through baking.

    Tap the trays in the oven to set the sides then bake for one more minute.

    Tap the trays on the counter again when they come out of the oven.

    Let the cookies cool for 5 minutes before transferring to a cooling rack.

For the Icing

    After the cookies have completed cooled, mix together the powdered sugar, milk, and vanilla extract.

    You can place the icing in a ziplock bag or use a spoon to drizzle icing over each cookie.

    Let the icing completely set before eating!
