White chocolate Biscoff cookies are a delicious combination of sweet, creamy, and spiced flavors. Ingredients

  • Flour – Provides the main structure and gives the cookies their soft, chewy texture.
  • Sugar – Adds sweetness and helps the cookies become lightly golden as they bake.
  • Brown sugar – Adds sweetness and a warm, caramel-like flavor.
  • Butter – Makes the cookies rich and tender.
  • Baking powder – Help the cookies rise and become light and tender.
  • Salt – Balances the sweetness and brings out the flavors of the other ingredients.
  • Egg – Helps hold the ingredients together and gives the cookies a soft texture.
  • Vanilla extract – Adds a warm, sweet aroma.
  • White Chocolate chips – Add creamy sweetness and delicious little pockets of chocolate throughout the cookies.
  • Biscoff cookies – Adds a crunchy caramel texture and flavor.
  • Biscoff cookie butter – Adds a rich caramel flavor.

White Chocolate Biscoff Cookies

White chocolate Biscoff cookies are a delicious combination of sweet, creamy, and spiced flavors. The buttery cookie is soft and chewy, with crunchy Biscoff pieces and sweet white chocolate chips in every bite. The rich white chocolate pairs perfectly with the warm caramel and cinnamon flavor of Biscoff, making these cookies a tasty treat that is hard to resist.

Ingredients

  • 85 g unsalted butter, (softened)
  • 75 g sugar
  • 75 g brown sugar, light
  • 1 egg
  • 1/2 tsp vanilla extract
  • 180 g flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 100 g white chocolate, chips or chopped
  • 50 g biscoff chocolate, chopped
  • 4 sticks biscoff cookies, topping
  • 2 tbsp biscoff cookie butter, melted

Instructions

For the Cookies

  • 1

    Preheat the oven to 350°.

    Prepare 2 baking sheets with parchment paper or silicone mats.

    In a stand mixer or using a handheld mixer, cream the butter and sugar together until light and fluffy.

    Add the egg and vanilla extract. Mix until combined.

    In a medium bowl, whisk together the flour, baking powder, and salt.

    Add the dry ingredients to the butter mixture. Mix until combined.

    Using a spatula, fold in the white chocolate chips and biscoff cookie crumbs.

    Form 8 balls (Place 4 on each baking sheet).

  • 9

    Bake for 16 minutes making sure to rotate the baking sheets halfway through baking.

    Immediately after baking, place a half biscoff cookie on top of each cookie.

    Let the cookies cool for 5 minutes before transferring to a cooling rack.

    After the cookies are cooled, microwave the biscoff cookie butter for 20 seconds.

    Drizzle the melted biscoff cookie butter over each cookie.

Notes

  • It is better to use a scale when measuring out dry ingredients. However, if you don’t have a scale then you can always measure out the ingredients with measuring cups and spoons. I use the spoon and level method when measuring flour.
