White Chocolate Apricot Cookies

familyfunwithlittlesSeptember 2, 2026

Buttery, soft, and irresistibly delicious, our White Chocolate Apricot Cookies combine creamy white chocolate with sweet, chewy pieces of apricot for a perfectly balanced bite. The rich sweetness of white chocolate pairs beautifully with the bright, fruity flavor of apricot, while the golden edges and tender center make every bite extra satisfying. A deliciously unique cookie that’s sweet, fruity, and impossible to resist!

Ingredients

These cookies are easy to bake and require simple ingredients.

  • Flour – Provides the main structure and gives the cookies their soft, chewy texture.
  • Sugar – Adds sweetness and helps the cookies become lightly golden as they bake.
  • Brown sugar – Adds sweetness and a warm, caramel-like flavor.
  • Butter – Makes the cookies rich and tender.
  • Baking soda – Help the cookies rise and become light and tender.
  • Salt – Balances the sweetness and brings out the flavors of the other ingredients.
  • Egg – Helps hold the ingredients together and gives the cookies a soft texture.
  • Vanilla extract – Adds a warm, sweet aroma.
  • Rolled oats – Add a hearty texture and extra chewiness.
  • Dried apricots – Bring a chewy texture and a naturally fruity sweetness.
  • White chocolate chips – Add creamy sweetness and delicious little pockets of chocolate throughout the cookies.

Together, these ingredients make soft, chewy, flavorful cookies that are easy to bake and perfect for sharing.

I like to purchase the dried apricots from Costco. I can’t tell you how many times these cookies are requested by family and friends! The bigger bag from Costco comes in handy!
